Good afternoon and Happy Sabbath.
Not much to share today. I am thankful for God's timing. I had stayed on zoom thursday evening to help my son participate in a youth week of prayer. He had to do song service and I was beyond tired. I dozed off once or twice and I was so tired that I didn't set my alarm clock. The next day I had planned to start my work at 6am because I worked too much early in the week. My normal start time is 4:30am and even though it was to be 6am I had intended also to set my alarm for 4:30am so I could perhaps do some prep work, go back to sleep and start back at 6am.
I went to sleep and slept pretty good. I woke up feeling like it was Saturday and thought to myself that I didn't prepare for the Sabbath school lesson so I would have to rush and figure it out later in the morning. I lay there and then my senses fully came back to make me realize that it was not Saturday but Friday and I jumped to see what time it was on the clock to my left.
The clock was exactly 6am. I had some panic but was able to get everything together. I thank God for waking me up on time. I could have overslept until 8am and then where would I be? Things like this have happened in the past and each time God was on time helping me to be prepared when normally I wouldn't be.
I thank Him for a good week at work. I had some productive meetings, did some door dashing, and had a great day at church. I look forward to getting outside tomorrow to work on my front lawn and back yard gardens. I can't wait to mow the grass. I intend to purchase tulips and other plants to beautify my property and want to get spring over here because it is time man. I need to purchase new soil, buy seeds for the gardens, get some potted plants for the porch, and do spring cleaning. Next weekend I'll set aside time to wash my hair, cut my son's hair and do my taxes.
I had a good lunch from church. My son treats me like I'm a rabbit and picks up plates of rice and plain salad but church sis, good lookin out because she came through with the chick peas, cabbage, plaintain, and rice and peas. I enjoyed that with some of my asian coconut style mung bean n rice and dalgona cupcakes. I make vanilla cupcakes and stick a wide shard of fresh made dalgona candy in the middle. You can use the dalgona shard to scoop the cupcake like a spoon or fork if you like or take a bite of cupcake and then dalgona. I had made M&M cupcakes for my son and experimentally made dalgona cupcakes for myself (they each have a dusting of powdered sugar too) and he never even touched the ones I made for him. He went to eat all of mine which are vegan. I was so angry when he did that the first time. I made a batch of 12-16 yesterday and we are currently down to 2 cupcakes left. You should experiment with candy making and see how it elevates your deserts. I don't do dairy but if I was, I would try to make a toffee flavored dalgona or thinly layered toffee to go with cupcakes. I used to make toffee and not too long ago made candied fruits like strawberries and mandarins. Anyway, I'll get off of here. I had a good day and look forward to what is to come in the new week.
